I think this is a wonderful, healthy soup. I love it, it tastes great - infact it has become my everyday quick lunch with a wholewheat english muffin - perfect!

Amy's generally makes such good food that I was a bit disappointed in this. I expected a somewhat more complex soup, with undertones of vegetables complementing the lentils. Perhaps I am spoiled on fresh soups, for the vegetable flavor was flat, leaving a rather one-dimensional bean taste to the soup. Like many canned goods, it was a little on the salty side, though the sodium blended fairly well with the stock. There are, however, many positives, including a excellent medium thick stock, and enough lentils for a satisfying meal. Add to this Amy's insistence on organic ingredients and you have a way better than average soup that is more natural tasting and free of false notes than others. If you add fresh vegetables (fresh carrots, onions, spinach, etc.) and some spice (pepper, organic olive oil, garlic, maybe a drop of vegetarian worcestershire sauce), you'll have an convenient healthy meal that tastes better than what you get straight out of the can. Ingredients Filtered water, organic lentil beans, organic celery, organic onions, organic carrots, organic potatoes, organic extra virgin olive oil, sea salt, spices. Considering this recipe, it's again surprising that a more layered taste did not emerge. Perhaps more flavor and scent would emerge with the addition of some of the vegetables and spices noted above. You might even want to experiment with a splash of red wine. Nutritional Information There are two one-cup servings per can. One serving has 150 calories (40 from fat), 4.5 total grams of fat (only 0.5 grams of which are saturated, no cholesterol, 590 mg of sodium (which is 25% of the daily value based on a 2,000 calorie per day diet, 19 grams of total carbohydrate (9 grams are from dietary fiber, and 3 grams from sugaes), 12 grams of protein (12% of the daily value), 30% of Vitamin A, 15% of iron, 19% of Vitamin C, and 2% of calcium.
