Vintage dated each year, the Domaine Carneros Brut cuvee represents the best of Carneros pinot noir and chardonnay made into a classic sparkling wine.The 2003 growing season produced an unusually small crop resulting in extraordinary flavor intensity. Carneros fog allowed the fruit to ripen slowly over the summer further enhancing fruit flavor development and maintaining ideal acidity levels.The 2003 cuvee is composed of 68% pinot noir, 31% chardonnay and 1% pinot blanc. The Brut was aged for three years before release. If you are tempted to see what a great sparkling wine will do with more age this is one to lay down.. The cuvee intertwines lovely floral aromas of honeysuckle and freesia accented with fruit impressions of melon and peaches. Notes of brioche, caramel and baking spice add to the complexity. The wine finishes with the signature creamy flavors for which Domaine Carneros is famous.. Complements a wide variety of seafood, poultry and duck it also pairs well with filet mignon, steak tartare and Asian dishes.
